The fruits, similar to olives, are manually pressed to separate the pulp from the pit. The oil is obtained from the like-almonds contained in each halve of the pit, once these are toasted and grounded. The tree grows only in Agadir´s and Essaouira´s dry soil, south east of Morocco. The oil has been highly appreciated by the Verebers during thousands of years, for both its gastronomic and cosmetic qualities. The taste of Tamanar´s oil reminds of that of the hazelnut and it fits perfectly in many plates, such as potato cream, orange and carrot salad, fish, and even well cured goat cheese. It is also a good bet to put it on bread or a green salad.
